MAKES FOUR (1/2 HOTEL PANS)
2lb WHITE BREAD, CIABATTA
2 C WHITE CHOCOLATE DUST
8 C HALF & HALF
16 C MILK

LINE HOTEL PANS WITH SHREDDED WHITE BREAD. MELT WHITE CHOCOLATE AND HALF & HALF TOGETHER. BEAT EGGS, MILK AND SUGAR UNTIL WELL BLENDED. WHISK IN CHOCOLATE / CREAM MIXTURE. POUR OVER BREAD. PUSH BREAD DOWN INTO MIXTURE TO COAT EVENLY. LET STAND TILL MIXTURE IS ABSORBED. PUT PANS IN WATERBATH. BAKE IN OVEN 350 F FOR 35 TO 40 MINUTES, OR UNTIL SET.
